Most of what we serve is prepared in-house, from broths and sauces to fresh pasta. We choose our ingredients with care, considering their origin, freshness, and natural character. Each dish is created to maintain balance and clarity of flavour.
The menu evolves with the seasons, allowing us to work with what is best at any given time. This brings a sense of vitality to the kitchen and lightness and precision to each dish.
The setting is calm, surrounded by century-old pine trees. A natural space where everything unfolds without haste.

The menu at “Palanga” has been created by Italian chef Giorgio Pignagnoli, a chef with extensive experience, including work in Michelin-recognised restaurants across Europe.
His cuisine is guided by respect for classical Italian gastronomy and a strong focus on the product. This foundation is combined with local ingredients, allowing dishes to retain familiar flavours while gaining a distinct, regionally inspired character.
The kitchen uses fresh, carefully selected ingredients sourced from trusted suppliers and local farms. During the warmer months, the menu is complemented by grilled dishes that maintain the same lightness and clarity of flavour.
Desserts are prepared in-house, balancing classic elements with simplicity. The wine list brings together well-known regions and contemporary selections, complementing both the dishes and the overall experience.
